Bacon-Cauliflower Chowder
serves 4
Ingredients
- 4 sl bacon, 1-inch pieces, crispy
- 1 ea onion, chopped
- 2 ea carrots, peeled and chopped
- 2 stalks celery, chopped
- 2 cl garlic, minced
- 2 T flour
- 2 sprigs thyme, stripped and chopped
- 1 head cauliflower, small florets
- 4 C vegetable broth
- 1 C whole milk
Instructions
- Cook the onion, carrots and celery in bacon fat until soft. Add the garlic and cook until f ragrant. Stir in the flour to form a roux. Add the thyme and cauliflower.
- Pour in the broth and milk and bring to a boil, then simmer until the cauliflower is fork tender. Season to taste.
- Plate, garnish with the bacon, and serve.
