Bacon-Cauliflower Chowder

  1. Cook the onion, carrots and celery in bacon fat until soft. Add the garlic and cook until f ragrant. Stir in the flour to form a roux. Add the thyme and cauliflower.
  2. Pour in the broth and milk and bring to a boil, then simmer until the cauliflower is fork tender. Season to taste.
  3. Plate, garnish with the bacon, and serve.
